Palak Tofu

Last night was a Palak paneer day - but instead of paneer, tofu.

So palak was lightly boiled with green chilli, then in the mixie a puree was made.

In the wok, in hot oil, tomatoes, the palak mixture, tofu, coriander leaves - and a good tasting dish.

I love spinach in all forms and this was great.
