Not wanting to sound cheesy, but there is a variety of cheese called the Bandel Cheese which is available probably in New Market , Kolkata only.
Bandel in Kolkata was a Portuguese settlement and they invented this kind of cheese. From far, it looks like dry mozzarella cheese rounds, but smaller - probably an inch in diameter.
Comes in two colors - white and brown. The cheese is made the way paneer is made from cow's milk. The cheese is then well salted, to help preserve it for long. The white one is plain cheese, while the brown one is a smoked variety, the smoking done with cow dung smoke.
