There are times when you want to have that bowl of mishti doi which does not have added vegetable fat to make it creamy, or colour to give it that brown tinge.
So what do you do? Make some at home. I had it last night for Dinner, having started the preparation on Saturday.
It is time consuming, but the efforts are nothing after you taste it. You need plain yogurt , sugar and milk.
Boil the milk till it is thick and slightly brownish in colour - just that touch of brown about to come.
Add sugar and dissolve it. How much sugar, depends on how sweet you want it.
For extra colour, add some caramel - in a small non stick pan, heat some sugar till melts and bowns. Remove from heat and add some water.
Add this to the sweetened milk.
Now let the milk cool down, till it is slightly warm. Now mix the plain yogurt into the milk.
Preheat an oven to the minimum temperature. Once done, Put the covered bowl of yogurt milk/ mix in the oven, close the oven door and forget it for 8 hours at least.
Do not open the oven door in between to check.
After 8 hours/ overnight, check to see how the yogurt looks.
Mishti Doi is ready. Refrigerate it and have cold mishti doi .
